This rolled rump roast features rich marbling throughout lean, ruby-red meat with a clean, robust flavor profile that only properly raised grass-fed beef can deliver. Each roast is expertly trimmed and rolled by our skilled butchers to ensure even cooking and maximum tenderness. The natural diet of our cattle creates beef with higher levels of omega-3 fatty acids and a richer nutrient profile than conventionally raised alternatives.

Simple Preparation Methods

  1. Classic Slow Roast: Season generously with salt and pepper, sear on all sides in a hot pan, then roast at 325°F until internal temperature reaches 135°F for medium-rare. Let rest 15-20 minutes before slicing.
  2. Dutch Oven Braise: Brown the roast in olive oil, then add beef stock, red wine, onions, carrots, and herbs. Cover and cook at 300°F for 3-4 hours until fork-tender.
  3. Herb-Crusted Roast: Coat with mustard, minced garlic, fresh herbs (rosemary, thyme), salt and pepper. Roast at 350°F until desired doneness.
