About this cut

Ground brisket is made from the brisket — the well-worked chest muscle that gives some of the deepest flavor in the whole animal. We grind it fresh in small batches from 100% grass-fed cattle raised on pasture and finished entirely on grass.

Because brisket naturally contains a bit more intramuscular fat than many other cuts, the result is a richer, juicier grind that’s especially well suited for burgers.

Flavor & cooking notes

Ground brisket is known for its deep beef flavor and naturally juicy texture. The slightly higher fat content makes it ideal for burgers and skillet cooking.

Cook over medium heat rather than very high heat to keep the meat tender and juicy. For burgers, a good sear followed by a short rest time brings out the best flavor.
