Keep frozen until ready to use. Chicken backs can be stored frozen for up to 1 year. Thaw in the refrigerator overnight before cooking. Homemade broth can be refrigerated for up to 5 days or frozen for longer storage.
Place chicken backs in a large stock pot or slow cooker and cover with water. Add onion, carrots, celery, garlic, herbs, or a splash of apple cider vinegar if desired. Simmer gently for 8-24 hours, then strain and refrigerate or freeze.
The longer the simmer, the richer and more gelatinous the broth becomes.
